What do you think of this book? Some call it a classic, others call it various other things. I haven't been through it completely just yet, but so far most of the stories have been very intriguing and quite captivating although a lot more vulgar and violent than I expected with the book being so often mentioned in pop culture.
The stories you hear from this during youth are mostly always abridged to be less violent I hear
I'm not sure about the value one would get from it sitting down and reading it straight through, I found it a pleasure to read on-the-go or just a few stories at once

It's the same with the Brothers Grimm. The actual stories themselves are horrifically violent and gory, but we sanitize and abridge them and tell them to kids.

Which edition/translation should I read? Which is the most complete, if there is even such a thing?

I'd go with the 3 Penguin volumes for most complete.
The Norton Critical Edition might also be worth looking in to. I don't have it, but it sounds interesting.
