I personally use Scrivener on my laptop, and on the rare occasion I'm away use iA Writer in my phone because there's no Scrivener on Android. Sometimes I use Simplenote.

Basic text editors allow for the most variety in terms of document arrangement and saving. You can autistically work on a paragraph or even a sentence in its own file and then just merge them together later.
