A group of my friends and I are trying to start a book club. Not a big deal, just kind of a casual way to stimulate our minds a little bit. We're seniors in college. What books do you recommend we read, /lit/?

Lolita. It's relatively easy to read, it's a great read, and its thematically and formally rich enough to generate discussion for ten years among you.

Find some source that you both kind of like that shoots out books (like NYT book reviews or something) and work from there.
I would say don't pick very long books unless you are all actually serious about it.
