In my opinion, these are the easiest comedy, easiest tragedy, easiest history, and Romeo & Juliet.

I recommend that you find a way to watch or see them as well, as they're not made to be read. Saying that, I would suggest either Macbeth or Othello for tragedies, Henry V or Richard III for histories, and Much Ado About Nothing and A Midsummer Night's Dream for comedies.
I know this isn't what you asked, but I have a Shakespeare pro-tip:
Listen to an audio play and read along simultaneously. It really helps you understand the cadence and pronunciation. It's just a great, immersive experience.

Apart from their isn't any pronunciation accurate audio plays, modern pronunciation is completely different than what Shakespeare expected.
