His death is actually very important in moving the plot along

Joffry was a Fun character,a personality so twisted he made Caligula look like a choirboy. But no matter how fun a monster can be,eventually you'll be at the business end of his guillotine. So you put the mad dog down.

He was too hateable in the show. Show writing is really boring and one dimensional.
