Depends, there's a handful of used bookstore finds but it's rare to find something beyond classic lit like cervantes, joyce, faulkner, nabokov (which are of a few of the ones I bought used) Plus it's just too easy to one click buy stuff on amazon and get it here in a day or two.

Because most bookcases have at least two fixed shelves, and you end up with narrow shelves and books that won't fit where you want them upright, so the choice is to lay them down, on their edge, or put them far away from their appropriate spot. Also, sometimes you just need to have a stack to save room. I'd rather not waste space and screw up the order constantly.

I use/have used most of them. The lit crit, history and auto/biography sections are Japan-heavy since it's my area of study.

If you mean the food section, the Edible ones are for recipes, the others have great specialized info. Tea: History, Terroirs, Varieties is the most comprehensive book on tea available.
