if you're being this anal about pronunciation you would pronounce quixotic as "kee-sho-tic"band use quijotic for "kee-ho-tic"
modern Spanish uses j for the H sound and for spelling Quijote in general. We still use the X in English for Quixote but it represents a "sh" sound
