Poetry is a waste of perfectly good prose stretched and bent to make it sound rhythmic, putting aside content for aesthetics.
Literature is an art form, encompassing narrative/epic, lyric, written dramatic works and nonfiction (biographies, scientific works, newspaper articles, but those generally aren't concerned with artistic quality).
Prose and poetry are techniques of writing literature. Prose is like everyday speech and writing, I'm using prose right now. Poetry is a style that requires rhythm and is written in verse. Rhythm can be achieved in many ways, usually with rhyming, regularity in stresses, alliteration and pauses (caesuras).
The first two are shit, the third isnt.
Poetry is when the words don't go all the way to the right margin of the page. Prose is when they do. Literature is when universities pay attention to the words.
