Obviously Rowling's Hermione is white, you can be damn sure she'd have mentioned it if it wasn't. But being white isn't an important part of the character. Prejudice based on skin colour doesn't exist in Harry Potter land, so making the character black changes nothing in universe. From an audience point of view it maybe even enhances the mudblood thing.
In short, this isn't something worth getting autistic about.
