haven't read it but kode9 (Sam Goodman) wrote a book called Sonic Warfare and is probably pretty close to what you're describing given his background
For western music theory Walter Piston's books on harmony & counterpoint are the best. Introduction to Post-Tonal Theory by Strauss (which also has lots of sources) and Schoenberg if yr interested in 20th century.
I also like Structure and Style: The study and analysis of musical forms by Leon Stein and I've heard good things abt Charles Rosen
If you want some REALLY heady aesthetics/philosophy of music shit get Being about Music by Boretz & Randall

Music theory.net is fantastic. Self-taught myself with that with a few other sites and music documentaries. Went from not even knowing what a chord was to having a very intuitive grasp of how music works
