There are, actually. There's Erasmus of course, Spinoza, Descartes wrote most of his works here, and before that there was a very rich literary tradition. Frits van Oostrom has written a whole series of books on it

Also, if you like the really early stuff about Holland, you can try out Tacitus. His history of the Bataven (the proto-Dutch) is really interesting
