Because legal marriage provides legal benefits, AND trying to take away legal marriage would receive a lot of opposition from straights, while those who aren't blatant theocrats can just be indifferent about gay marriage. Ideally we would have a separate term for legal marriage to get rid of the confusion with religious stuff, but even that would probably be seen as too much of an imposition on straight people to succeed.

Why don't we just gas all straights to save us trouble?

Doesn't change the fact that it's just a wise economic move for both people especially in some niche circumstances and they can both recognize this, not love each other, marry each other for mutual profit, and essentially just get the same benefits a real marriage does. Which have no reason to exist. There is no excuse for there to be real useful utilities with marriage for any people.

If you marry someone from another country they require that you cohabit for a minimum of 6 months before they give you citizenship.
And "common-law" marriage exists for people who live together for 6 years or so.
Marriage has everything to do with being together and having similar goals.
