Why does the rainbow flag have six colors instead of seven?

It started with eight, but then hot pink was removed because of fabric availability when the flag started to take off as a symbol and be mass produced.
Then Market Street in San Francisco wanted to display the flag on their lamp posts, half the colors one side of lamp post, half on the other, so they dropped turquoise to make it even. And that version was what became popular.

Each color also has symbolic meaning. I'm frankly glad that the turquoise was removed — it's a better look, and otherwise our flag would be identical to the flag of Cusco, Peru.
