I'm particularly curious about ones I wouldn't have heard much about. So anything off the beaten path. Something with a glorious track record has all that fun already way behind it, anything with just odd traits is interesting in a very different way.

HIV isn't that great. It's been around forever and has a prime market for infection yet barely mutates.
It's only been recently with the release of PrEP that there has been some worry but not much is really happening. Drug resistance is going up but there's a lot of antiretrovirals out there now so it doesn't matter that much.
Influenza is probably still one of the deadliest. Easily kills like a million people every year, consistently mutates, cures only work for certain types and it mutates quickly so the cures don't work anyway, plus it's airborne.
HIV is shit-tier at mutating. The only thing is does is microevolutions which are like tiny little modifications on the proteins.
