You cannot prove that there are two genders, in the same way that you cannot prove there are sixteen types of monkeys. There is a boring way in which there are different groups of monkeys with objectively differing levels of gene correlation, but these categories aren't actually more real than intuitive ones based on observable features. They're useful for different purposes.

Categories aren't facts about the world. They're just... categories, to be used and manipulated for our own purposes.
