It's suuuuper basic because I make it so bloody often. I'm supposed to add coconut milk or something at some point, but I just skip on it.

But yeah, it's seriously just chicken broth (reduced) (usually 2 cartons) + rice noodles (thin tends to be better) + bird's eye chilis (~6-8) + as much crushed garlic as possible because you can never have too much garlic + a good amount of finely chopped ginger + salt / pepper + leeks or onions (different flavour profile entirely depending on which you use) + a little parsley + whatever veggies you want (usually I use fresh peppers, mushrooms, carrots, and broccoli with frozen corn, peas, and spinach). Obvious, keep it at a simmer and put things in relative to cooking time.

It's super basic, but super delicious. Simple, easy, low-cal, and loaded with nutrition.

There's another thing that I tried out, which was basically ghetto ramen. Basically, beef broth + bacon (skimmed fat and cooked to a crisp in a frying pan), scallions, onions, garlic, and anyt veggies you'd like in your broth. Combine with ramen noodles, and it's goddamn delicious. Bit rich though with all the bacon, so you'll probably need help.

The ginger, yes, but it'd be kinda dumb when you can just throw it in at the start for a better distributed flavor profile. I wouldn't go with raw chilis, they wind up all tough and nasty if you don't let them cook. Besides, it would mean that all the spiciness is concentrated inside the bits of chili in the soup, instead of evenly distributed. Kinda silly.

You can leave out the chilis, but then it's just a thai spin on chicken noodle soup. You can add protein if you want, but I usually renege.
