Most, if not all, do it involuntary. There are tons of political correct theories which try to explain it as something cultural.
My opinion is that it is something mostly inherent to homosexuality.

The "gay way of talking" in general is a cultural reaction to the ways strong female role models are depicted in media. Basically since gay men don't identify with straight romances they end up identifying with straight women, which are the closest thing to them, and they start imitating their femenine manner of speaking subsconsciously, because people imitate their models.
