Help me, /k/, I've tried various sharpening methods for improving my knives, daggers, etc, but nothing seems to give a razor edge. What the hell?

I've tried whetstones, files, and belts, but nothing works.

dunno i kind of managed to get the kitchen knives sharp enough to shave with the first go. had to stop cause gf was pissed. she said she can't do shit with those knives they are too sharp. i'm like "what there is no such thing as a knife too sharp" but she insisted i fuck right off.

You would be surprised by the shear number of people who dont know how to use a sharp knife. Most people never sharpen their kitchen knives and just get used to them being dull pieces of crap.
When presented with a sharp knife, all the stupid safety things they dont bother doing actually cut them now. So they blame the knife instead of learning to be safe.

It would help to know more about what you are sharping. Some steel will not take a hair popping edge. Other steel can only be sharpened with diamonds and ceramics.
We need more info to give good answers.

Noobs make three kinds of mistakes:

Holding the blade at too low an angle so they only grind off the corner between the bladeface and the bevel, which means they never reach the actual apex of the bevel. That way you can grind away on the stone for an hour and the knife never gets any sharper. Check for this mistake by painting the bevel with a black Sharpie marker before sharpening. Also, always check for the formation of a burr when you think you have finished with one side. If there is no burr that means you haven't reached the apex.

They do not use a proper progression of stones - much too little on the rough stones, much too long on the finer ones.

They do not properly remove the burr after they have finished with the bevel. Drag a woolen sock or an old, soft cotton cloth kitchen towel along the edge on both sides. If it doesn't slide smoothly, makes little scratchy/tearing sounds or you see bits of fuzz stuck to the edge under a magnifying glass then there is still a burr. A good indication is also when you can shave with the knife in one direction, but not in the other.

Most likely you are not setting the angle correct. A fillet knife needs a very fine angle of 12-15°. A hunting knife that will be used for more than just skinning would be best served with 20-25°.
The next thing is most knife will not have the angles set like that from the factory. So when you go to sharpen to how you want you will need to re-profile the edge to your liking.

Has some good points about using a sharpie to tell where you are actually grinding down.

Also you dont use files unless it is a machete or axe. If you mean sanding belts, those are probably way to coarse to get a good edge and are likely to remove to much metal.
Whetstones are good if you know the grit of them.
Wet dry sandpaper layed on a piece of glass is also exellent for just getting started. Read some forums on Shaving razors also.

you should be able to get a decent edge out of a single 180 grit stone. edge will be messy sure, but it should cut very well. if it's not sharp at that grit then no point moving up.

Its most often used by wood workers to sharpen chisels and planes but works just as well for knives. Wet dry sandpaper, can be found in the automotive sections of most stores by the paint. It comes in higher grits of 400, 600, 800, 1500 and up.
If you already have a good edge on it you can start around 400 grit. If you dont have a good edge and you need to reprofile the blade a little, start with a high quality 220 grit.
You lay the paper on top of a super flat surface, glass is a very good one and is rather cheap and easy to get.
You might need to glue or tape the edges of the sand paper down so it doesnt move.
From there you treat it just like a whetstone, add a little water and push the blade over the paper.

Only way I've gotten it that sharp is with my worksharp belt sharpener.
I can get stuff fairly sharp without it, but this thing just sucks all the effort out of getting a shaving edge with the 8000grit belt. I can get my chef & deer knife hair-popping sharp.
I occasionally strop too with a wood block similar to what is in this post>>35184852, but the main difference for me is the belt sharpener.
I also like my 1200 and 2200 12" ceramic rod combo to get things acceptably sharp quickly since it can still take a lot of effort to repair a terribly neglected edge with the worksharp. And too many people I know have trusted those pull through sharpeners that turn knives to shit.
I feel like I can improve on a factory knife edge on plenty of knives with my rods alone. Some companies seem to ship sharper than others though.

I had a set of waterstones and a angle reference guides to show me how to hold the blade.

You have to be as consistent and uniform as you can go. And practice and do it a ton.
Early on, I had to spend hours on a single blade and I had rubbed my finger skin off of the stones. But after going at it and adjusting, it's down to 15-30 minutes depending on steel and how anal I am at the moment.

I use heirloom whetstones, One is from the early 1900s, another is from 1980s and looks like granite, and the other is one of those black oil stones(i cant remember the name).

sure, but a finer stone leaves a finer blur.
You can rmove it with something less aggresive like lether/wood and some particles witha greater hardness then your steel (chromiumoxid,diamondpowder...)

you are always going to have a bur on the stone. The higher the grit the smaller the bur.

How ever stropping against a piece of leather will sort of break down the bur. The leather needs to have a polishing agent on it. I generally just use the the slurry water the builds up on the stone while sharpening.
