You know stealth isn't an all-or-nothing game to be completely invisible, right? Even if you're fighting an enemy that can detect you, stealth means they're going to detect you less reliably and much later than they'd like. Search radars by definition can always been detected from further away than they can detect you, even under normal conditions; stealth further reduces the range at which a stealth fighter can be detected. By then you (the guy at the radar site) have to worry about the anti-radiation missiles that are likely already on the way, so you'd better get your SAMs off quick and switch the radar off and hope you can move it or intercept the HARMS somehow. There will likely be losses to the F-35s, particularly in the opening strikes, but they will degrade your air defenses and that will open you up to further strikes that will further degrade them. That's the basic doctrine and the point of the F-35 is it can do all this while being produced in large enough numbers that you can countenance the losses while still having a capable platform that is difficult to detect and can get missiles where they need to go.

It must be noted if you add up the max carry on all pylons it's actually pretty close to the F-15E's.
