They actually were for some time, early firearms were't powerful enough yet and full plate armor lasted up to the 16th century. There's a nice movie here that shows that, the only movie I've seen depicting renaissance warfare with armor.

I doubt that stuff would even stop anything beyond "maybe" some common handgun rounds. Still probably wouldn't completely stop a close-up shot with a handgun or tight shotgun pattern unless it's a bit of a grazing hit or something weaker like 32acp that I've confirmed can be stopped by fairly thin metal. (pic related) You'd have one hell of a welt if your skin was touching where it hit though.

I don't know jack about plate mail. But it depends on the thickness, and especially hardness of the steel. Properly hardened stuff wouldn't see more than a lead stain from most 22 and common handgun rounds.
Once you get up to rifles, you'd have to wear so much thick steel that your knees would probably give out.
I shoot ~1/8 in and 1/4in or slightly thicker extremely hard steel. Even the 1/8in will stop most 762x39 just because it's moving too slowly to punch through, and the 1/4in will laugh off all but bullets traveling well over 3000fps. So while it'll stop 54r and flatten that steel core right out, 223/556 will zip right through from my 23" gun.
Penetration depth on soft steel shows 556 penetrating double of 545x39, and 545 penetrating double 762x39. The 762 dumps more energy into it when you watch the target move, but doesn't have the speed to go deep.
