You're not likely to have breathing problems from being shot through the lung unless it's a high caliber that blasts a a chuck of it out and or part of it is removed.

I punctured(broken ribs) /collapsed both lungs and have have several tubes in each in followup surgeries. As long as you do proper pulmonary therapy/exercise you should be from it.

Living wise? Brain (though people survive this, especially if the bullet fails to tumble), brain stem, spine, and heart are generally under the "you're fucked" section. There's really a lot of circumstances to headshots.
Like, is it a handgun, is it a rifle, what's the distance, what's the angle, etc, but even then there's just the element of chance.
There's people who've been shot in the head with .45ACP pistols and the bullet has deflected off the curved surface of the skull, or outright slid along it, without actually penetrating into the cranium.
Not nice wounds by any means, and easily incapacitating, but it's not 100% surefire.

Shit, one particular story that comes to mind is a guy attempting suicide, puts his .38 to his temple, pulls the trigger, the bullet goes straight through and exits the other side.
Guy *doesn't* die, in fact he doesn't even black out, the trauma and brain damage is slight, but just enough that he forgets that had been suicidal and just attempted to kill himself, insists it didn't happen.
