Of large(r) magazine fed semi autos, you could consider the Browning BAR Match, or give Artemis AS a call and hear if they have any Vepr Supers left.
That said, I hear the Mini-14 is a fun little tinkering gun, and doesn't shoot all that bad once you've got it tricked out a bit (see the Mini-14 thread at Kammeret).

As I wrote, there is the BAR Match, which comes with 20-round magazines. .308 recoil might be a bit sharp to magdump with, but it's a nice and heavy gun.
The Vepr Super you can get in .223, and I'm pretty sure I saw one in .308 on Finn just the other day. I know there exist 20-round magazines for it in the US, but getting them here is a whole different story... Maybe try Jetcarrier?
Both guns are supposed to be really good as they are, but have practically nothing going for them in the way of aftermarket parts, whereas you can doll up a Mini-14 six ways to Sunday.
Not gonna lie, my inner mall ninja screams at me to get one and dress up in an EBR chassis.
If you really just want a cool gun to mess with, you could consider the Troy pump action rifles, which are, to my understanding, extremely similar to ARs, if not for the manual action.

All of you whites who want guns but can't get them because of your country's gun laws, just come to America. We need more people like you here.

That's a shame. Here in Sweden, all government agencies has cleared it for hunting but the police is still in a hissy fit and sabotage and delay any effort to get one so it's a bit of an effort if you want one.

The laws are OK in a way if you live somewhere with an established DSSN, NSF or NROF presence.
You show up and learn marksmanship fundamentals with the club's guns for a period before you can buy your own pistol. After documenting attendance at a number of meets at a certain level, you'll be cleared to buy a tactical rifle (any from the list on the left in >>34921853's picture).
If There is no DSSN, NSF or NROF presence, you still have the option of taking your hunter's exam. Hunters can own most every manual action rifle in any calibre but .rifles in .50 BMG, and most every shotgun in manual action or semi auto as long as it doesn't have a pistol grip or feeds from a DBM.
Then there's some minimum length stuff too.
Hunters can pick their semiautos from >>34921853's rightmost list. The part in parenthesis reads (with exception of Browning BAR M/1918). Jolly good that they added that part too; I still remember when the country was flooded with them and you had gangsters knocking over banks and stores left and right and murdering policemen by the score with their assault-BARs. You practically couldn't walk anywhere without hearing the angry snarling of the guns and the users screaming with the agony of their painful erections.

On the plus side, though: Gun culture is very much alive. Lots of people hunt, others participate in competitions as set up by the NSF, DSSN, NROF, SWS, DFS, NBSF, NSU... We really don't have very many people screeching autistically to ban guns either.

The most popular method is to keep a range diary, you just record the day, the amount of rounds fired and get a signature from the RO. I usually just take pictures of the guns at the range and the target I've shot.

For handguns the minimum range visits to be eligible is ten. In two years.
