What are some good ressources to learn about the development history of tanks from WW1 to the current day?
Bonus points if those ressources also talk about the occasional weird prototype.

At most I've been reading wiki articles on various models, but that's far from a good ressource.

Achtung Panzer is a good book to read on an analysis on both the part of the Entente and Germany in WWI tank warfare, it's failings and successes, and then how to put forward a modern and effective tank force in today's (1938) world. This is more the tactics and utilisation of tanks rather than the physical, mechanical development of tanks.
Also check out the Bovington Tank Museums YouTube channel for their Matilda Diaries series and the Tank Chats series.

Not OP but anyone have anything for someone that doesn't care about the tank itself but the gun? I wan't to know how IFV guns work or tank turrets and such.

The only conceivable way to disable a tank with household elements would be to crack open the hatch and kill the crew or somehow disable the track, which does not disable the main gun or machine gun if applicable. A good place to ask this type of question would be QTDNDTOT (Questions That Do Not Deserve Their Own Thread) general which sometimes pops up on /k/.
