There's more to mud tests than they do(for example, in military testing sometimes you have different kinds of mud) and they are open about it, it's simply popular series so they're doing it relatively often.

The entire thing is that it is all about compromise.

VZ58 which I'll bring it up because it performed particularly horribly in their test, but it's the gun you wish you had in case of any kind of malfunction because after locking the bolt open, you have easy access to every part that can possibly fail(pic related, if you take out the magazine you can see through the receiver).

AR-15 was from the start designed to be as sealed as possible, the ejection is also relatively violent and as such, the gun will whack mud out of the ejection port while not letting it anywhere else. However, while there are total 3 things you do when your AK or VZ jam, there are like 30-40 separate procedures for clearing malfunctions out of AR because, welp, access to the action is quite hard.

I think the mud tests they're doing are more about dispelling memes than really making a solid argument about gun performance. Like an AR can keep chugging through a ton of stuff as long as it's well lubricated, but it can also jam in some really spectacular ways that are hard to clear. On an AK you just pop the dust cover off and there's the whole gun for you to figure out what went wrong.
