For the inevitable kebapocalypse, don't bug out but be where you need to be in the first place. Also get a gun.
For everything else, imagine a short vacation and add a sleeping bag.

Medium - Large backpack
>Firestarters: Lighters, Waterproof Matches, Firestrikers, etc
>Clothes: Set of lighter clothes for higher temps, and warmer stuff for lower temps
>Navigation: A Compass, Map, Knowledge on how to use them
>First Aid Kit, Learn how to use everything in it
>Hydration: Purification of some sort (Iodine tabs, Pumps, w/e), Carry as much water as you comfortably can.
>Food: MRE's are nice but kind of bulky and produce a lot of waste. Instead pack a small messkit and make your own and/or pack non perishables like rice and beans. Pack some spices too. Spice is the spice of life.
>Tools: Fixed Blade Knife, Hatchet/Camp Axe, Flashlight(s) and/or a Headtorch, Multitool, Folding Knife, Messkit, Camp Stove, Tinderbox, Some way to recharge electronics (I have a crank/solar powered emergency radio with USB and AC charge ports)
>Habitation: Sleeping Bag rated for your environment, Sleeping Pad and Tent, or a Camping Hammock.
