Two handing is purely a movie/tv thing, there is basically no benefit to wielding two guns at once since a magazine swap can be done in seconds and aiming both guns at once is basically impossible outside of just shooting in the general direction.

Proper technique is holstering one of the handguns. Humans can't focus on two things at once, it's quicker to move the gun slightly than refocus between them, and two hands give you greater control over the firearm.

There's really no practical usage of dual guns in real life, short of maybe desperate suppressing fire.

Honestly just apply the best techniques of one-handed shooting to both hands and make sure it looks good.

Full-auto shotguns are a gay meme for COD kiddies, and semi-auto shotguns are already very rapid (they can be as fast as you need them to be already) and they are best utilized with you using your full concentration and both hands for managing the shotgun to rapidly but shots on target with precision.

IRL shooting two guns at once is impractical like everyone else has said. What you could do is show your character doing what's called a New York reload there when one gun is empty you drop it and draw another.
