Hello /k/. I recently became interested in handgun shooting. After watching countless Youtube videos I see that isosceles is preferred. The problem I'm having comes when it comes to grip. Instructors tell you to bend your wrist all the way out. I find this uncomfortable and find myself resorting more to a "modified weaver" kind of stance (still squared to target, but have one elbow cocked downward at a 45 degree angle. Is this acceptable, am I overextending my wrist, or am I being a baby?

Any of these will do you fine, just choose what's most comfortable and effective.

It's supposed to be a little straining, the strain is what makes it easier to keep the sights from moving.
However, as long as you can see the sights and you shoot fast and accurately, the way you're shooting is perfectly fine.
