How do I get a non-gimped AR in NY? After doing some research I think I can get an AR, but only if doesn't have a pistol grip, a mag with more than 10 round capacity, or a muzzle break. Are these parts I could change out myself (when I leave the state of course) or do they require knowledge/tools I'm unlikely to have? Are there other "get out of the city" tools I should consider besides shotguns?

80% lowers can be bought online. Any other parts can be bought out of state.
For ATF: shall not be infringed

My brother had this same issue. He ended up taking a "Road trip" just private purchase one in a dif state.
Not NY here, but CA, and we have most of the same restrictions. Here's the deal - just buy a gimped AR at your local gun shop, then buy a set of non-gimped parts online. Keep the gimped parts on the rifle when you take it to the range, and the non-gimped parts in a drawer. Practice swapping them out so you can be fast at it in a WROL situation when you need a non-gimped AR. That's what everybody here in California does.
