Is there a place/market for bolters and bolter-like weapons in moderns military setting? As human carried anti-armour weapons I mean.
Do you think if someone designed something similar to it there could be a market for them as anti light armour weaponry?

No. We have moved past AP-HE shells for most purposes. HEDP/HEAT is better for rockets and grenades, APFDS for cannons.

You'd have to overcome all of those issues to be viable to a military.
Not really. Better to fire one good shot from an M3 or similar than a bunch of weaker shots from a 20mm automatic rocket gun, especially hen you have to carry all that less effective ammo in with you.
The closest you'll get is an XM25, which isn't really an anti armor weapon though HEAT rounds exist.

I like the idea, and sounds like a great challenge to waste a few years as a hobby. But thanks for making the problems obvious. I am pretty sure I can make a small bolter only about 20kg loaded with some R&D

Hmmm... I see. From what I see HEAT rounds can be made quite small if there is a desire to do so. Maybe having the bolter fire tiny HEAT rounds instead of a regular sized one could make it viable as a way to deal with light armour.
