Most of the good Presidents are already taken. Still some options, Jefferson sounds good but considering his relationship with the Navy probably inappropriate (probably why he's never gotten any good ships named after him). Adams would actually be fantastic. Grant would be decent even though he's not a naval man.

Carriers are named after people who have a large positive influence in the Navy (except Abe Lincoln there). It's coincidental that they tend to be presidents since they lead the effort to secure funding and expansion.

Attacking a carrier requires a concentration of forces. Concentrations of force are vulnerable to attack. So an aircraft carrier in a conventional war would be preceded by attacks on carrier killing weapons, coordinated to destroy those weapons before or when they reveal themselves to attack the carrier. With modern intel, ballistic/cruise missiles, and strategic bombers, effectively attacking a carrier would put the attacking forces in at least as much danger as the carrier itself. Would this approach be infalliable? Of course not. But war involves risks, and for the usefulness that airplanes bring the risk of the carrier being attacked and crippled/destroyed is worth it.
