Go the ultralight route, instead. Build a 2 seater. The pilot does all of those steely-eyed, square-jawed things the pilots do while the other guy focuses on managing the flock of homebuilt drones that accompany the ultralight. If you can build an ultralight you can mass produce generic drone airframes. Slap a mission package and power pack into a drone body and away you go. Load it up with ANFO and a couple of cell phones for nav, now you have a cheap and slow cruise missile.

Cessna 172s are the easier aircraft to fly in the world because of their high-wings. They can pull themselves out of a fall and can easily be taken out of a tail spin.

With proper training they are easy to fly, but Also very easy to go into a tailspin or a fall that is simply irreversible.
I have flown them and honestly a single piston aircrafts with low-wings are so fidgety and scary. even skilled pilots crash them constantly. seriously go look at small aircraft fatalities. 95% of them are all low-wing.

homemade planes are pretty popular though, they are usually built from kits but sometimes from scratch

it needs quite a lot of work and skill to built one from scratch, even assembling a kit isn't easy

iirc some small company sold kits/blueprints to build a plane using aluminum ladders, lol. it still exists but they use specially constructed aluminum frames instead, the manufacturers of the ladders weren't happy

Using converted car engines for an aircraft is asking for trouble. Dedicated aircraft engines are designed to be run at full throttle for hours on end, they are relatively large displacement and make power at low RPMs, like 3000 RPM max, except for some that use reduction drives, although that is not really done anymore for reliability reasons.
