What the fuck is my Mauser? It was advertised as a K98, but has Czech writing on the receiver. My closest guess is it's a VZ30 (VZ24 carbine) built by BRNO for Iran.
I bought it at a gun show because it was half the price the price of most Kar98's here in NZ (decent german ones go for around $1200).

Have you shot you 1895 before? I have one and I find the comb is quite sharp and makes it a little unpleasant to shoot. It is really accurate though.

I've put about 10 rounds through it, and its one of the smoothest shooting guns I've ever shot. Other than the fact that it shoots super high (to be expected), I love it.

Is it in the original 7x57 or was re-chambered for 7.62x51?
I have a re-chambered one, the action is smooth but if I use true to spec NATO ammo it does shoot high. My guess is the sights are set for 7x57 which shoots much flatter.

Not an Iranian-contract rifle. It is a Vz.98N (N=Nemacka="Germany"), a post-WW2 Czech-made copy of the Kar.98k. After the annexation of Czechoslovakia in 1938, the CZ-Brno Mauser production lines at Brno and Povaska Bystrica were gradually shifted from Vz.24 to Kar.98k production. After WW2 ended, the revived CZ-Brno kept producing Kar.98k for the re-formed Czechoslovak Army, and also for export (notable customers included Israel, Bolivia, and East Germany).

I roll my own ammo and have not run into pressure issues but the load that shoots the best for my gun is under max load. The big issue I have is the chamber was not reamed properly so I have to run my brass through a 8x57 die for the taper in addition to a .308 die for sizing. If I don't the bolt doesn't run as smooth.

This, I have one though it has a winter trigger guard and kriegsmarine stamped rings. They come in a variety of different configurations since they used a lot of war time parts as they filled contracts for the Israelis. Some were converted to 7.62x51 as well.

The yugo has a wide arc bent bolt. If you plan on putting glass on it that isn't a scout scope, you will have clearance issues with the bolt handle

Turkish Mausers are only bad in that the cheapest ones will be those 1930s-era 8x57mm rebuilds that were then heavily used by generations of conscripts of the Turkish Republic for training and consequently they're just worn out.

No, only the worn-out ones are bad. Same with every other Mauser. I would rate their workmanship as being on the lower end of the skill-level scale (same as post-WW2 Yugo Mausers or Chinese Mausers manufactured in the official Goumindang arsenals) but still serviceable and some shoot very well. "Turk Mauser" also covers a lot of Czech and German-made Mausers (that weren't Ottoman-contract rifles) that merely spent time in Turkey. My Vz.98/22 here gets 1.5-2MOA with surplus Turk and Yugo ammo and it spent about 70 years in Turkey; the Vz.98 is no slouch either.

Pretty much any bayonet designed for the Model 98 bayonet lug SHOULD fit. I'm not sure if the Czechs issued the German SG.84/98III or the Vz.24 bayonet for the Vz.98N, perhaps both.

Mitchell's Mausers is a company that refinishes historic rifles to pass them off as more valuable versions. They scrub serials and restamp them to match, they scrub makers marks and restamp with more valuable arsenal marks, they try to pass off their refinished fakes as original condition and authentic.
