CMP may finally be selling surplus 1911/1911A1 pistols. Was proposed a few years ago but of course the previous administration and Democrats were not fond of the idea. John McCain even added an amendment forcing the Secretary of the Army to have them melted down into security bollards for embassy protection. The good folks in the Pentagon dragged their feet because "well, we don't technically have a Sectretary just an acting one". Bless their little hearts.

Why are people often hesitant to shoot their WW1 or WW2 1911s (or vintage pistols in general but especially 1911s), but nobody worries about putting a couple hundred rounds through their Garand, 1903, K98, ect. Are old 1911s fragile or something?

They aren't fragile persay, but the slides were manufactured to be a very expendable item. They did not develop a way to fully harden the slide without warping it out out spec until 1948; 3 years after USGI 1911's stopped being produced. From 1924 onward, the front third of the slide was hardened to help prevent deformation. That is why you can notice a dark spot on the front of the slide on USGI 1911's.
