Less consistent lockup.
When a gun cycles, the lockup is always a little bit different, subtly, but enough that it'll matter for consistency in accuracy.
Making a rotating bolt consistent in it's lockup is easy, something like a an AR15 has 8 locking lugs in a radial pattern and as a result, the lockup is very consistent.
On a tilting bolt, the lockup will ultimately always be kind of sloppy and it's pretty difficult to make the gun lock in an especially consistent manner. It's a working system but ultimately you'll always have mediocre accuracy, and on top of that, the bolt will generally lock into recesses in the receiver, which requires you to have a receiver made out of strong enough steel.
On something like an AR15, the bolt locks into an extension of the barrel, thus you can make the receiver out of aluminum and it doesn't affect lockup.
