What's a good type of armor? I've heard ar500 plates are great. Are there any others on the market? Or your personal preference?

Definitely go for steel instead of ceramic. The military uses ceramic because it is cost effective and cheaper than metal. For Tier 1 and Tier 0 special forces like SEALs, they have all migrated to steel, usually multifolded which has higher tensile strength.

AR500 is a pretty big name for steel plate makers on the market currently and their gen+ anti-spalding coating basically makes fragmentation a non-issue for however many rounds the plate gets hit.

AR500 is a good choice, but like anything it's got pros and cons.

I just picked up a blackhawk striker plate carrier, and it says that it'll fit blackhawk plates. Anyone know if thats bullshit, aka if I can buy what ever plates I want as long as they'll fit in the pouches?

No, its not. AR500 steel armor is cheaper than ceramic plates. The military does not use it because it cannot stop higher velocity rifle rounds as reliably as ceramic, and it is lighter weight.

Navy SEALs are not using steel armor. They like stuff to be lighter, not heavier.

"Spalling" can happen to any plate, i'd recomend a second layer of soft armour or an anti spalling bag (british surplus ones are pretty good but are massive in comparison with a commercial plate)

It can, but because ceramic pulverizes under the impact of a projectile it tends to contain fragments as opposed to blasting them out and away. Steel is definitely spalling if not for a coating.

if on the outside it will slow the velocity to a more manageable force.
if you put it on the inside spalling will be caught by it and make the plate feel comfier
