I need a pocket knife to cut boxes and cut the plastic bands on shit. Any recommendations? Nothing too expensive.

You can get a spyderco tenacious for about $30 at wallmart. They are solid knives and will feel much better than a $5 dollar store pos. Alternatively find a wallmart stocker and offer $3 for their boxcutter. Those things are great for what you want and if the blade gets dull just put in a new one.

Disposable blades are the way to go for cutting boxes and plastic ties.
There are a bunch of OSHA rules that almost require your employer to give you a box cutter with safety features. When I was younger, I saw a big box store write someone up for using their own knife at work.

Milwaukee's folder utility knives are quite good. Fast and easy to open one handed. Several different models, one is smaller and slimmer, others have handle storage for extra blades. More comfortable in a pocket than normal sliding blade knives.
There's no reason to have anything but disposable blades if you're cutting banding and boxes all day.

Not op, but Does it lock closed? I picked up something similar a while back, and it didn't have a detent to help keep it closed. It would slowly slide open every so often, so I went back to using my regular pocket knife (Spyderco Delica) as I could trust it to stay shut.

I've been carrying a swiss army knife on my keychain for years now, but the spring on the pliers is kinda bent and both blades are chipped and dull. I'me looking into a multitool like a Leatherman but have no idea where to start, with all of these bells and whistles all of the different models seem so similar. Any suggestions?

The best advice I have is to honestly assess what tools you need to have with you and get a multitool with JUST those tools. It's easy to get in a situation where you're carrying around a dozen tools in your pocket that you never use.
