The first sight picture is a "combat" sight picture, allowing you to see the target as you are firing. The farther you get from the target, the less precise it becomes as your point of aim drifts further from point of impact, leading to potentially unexpected strikes. The second sight picture is a pretty standard "precision" sight alignment. As the impact is much close to your point of aim, falling directly behind the top of the front sight, it is much easier to predict exactly where the round will land without considering your actual hold over, distance to target, and relative size of the target. It was popularized before 3 dot sights were common and all you had were a post and a notch. The third sight picture is the same as the second, just shifted to use the dots for reference rather than the post and notch themselves

TL;DR
First sight picture for your carry gun, second two sight pictures for hitting the bullseye.

On safari or in your house? Use the first one, the top of the sight post goes on his upper lip. The round should impact in such a way as the hole made will "sit" on top of the sights at 7 yards.

its for target shooting at a known distance. like if you were shooting bullseye at 25. with that sight picture you could simply put the bottom of the dot on top of your sights and shoot. now it would be useless if you stepped a few feet back or forwards but you do it to excel at one specific task.
if you used 2 or 3 the frontsight would block out the center of the target.

Confirmed for NEVER having shot bullseye. You don't look at the target anyways. You align to the target and then focus completely on the front sight, what you're shooting out WILL be blocked by the sights. That's how they fucking work. You do not use a six o'clock hold for accuracy, you use it for remaining focused on the TARGET inside 7 yards.

I used to do 25 meter standard pistol at a small club in rural Sweden and the club pistols they lent to new shooters were set up like image 1. This was seven years ago.
