Are you shooting outdoors or at indoor ranges?
If indoor/25yd ranges just get pistol caliber carbines. Cheap ammo means lots of shooting.
If you're out in the desert, get an SKS or a cheap featureless AR.
An SKS is a good rifle, parts readily available here and you'll always have enough ammo for it. It turns heads more than a featureless AK or AR will, while (in the context of CA gun laws) is functionally equivalent to an AK. You'll probably never have to worry about future gun laws since it's about as featureless as they get. Only feature it has is the bayonet lug. Only issue I see here is most readily available ammo isn't legal to shoot on BLM land since you can't fire steel core/bimetal. But nobody cares.
Featureless AR is cheap and versatile. My suggestion is go featureless over magazine lock. Get a flash hider, a compliant grip that suits you nicely, and whatever fixed stock feels best. Most of the featureless stock/grip combos are shit (ex: Hera Arms CQR) don't bother. The only notable exception would be the Thordsen stock, which has one of the best manuals of arms of the featureless stuff but it looks stupid. I personally use a Sharkfin grip (in combination with the CTR fixed stock), it's more or less the same as any other grip wrap but has an extension to rest your thumb. Sharkfin and the Thordsen style stocks are really the only ones that you can carry single handedly. If you can't carry it single handedly, don't buy it.
Mini-14 is also an option but it's a bit pricier. I couldn't tell you the advantages/disadvantages over it except the AR will naturally have more parts options.
If you want something big, just get damn near any bolt gun you can find. Not going into detail since boltguns aren't my thing and 99% of them will be legal anyways. Assault weapons features only apply to the semiautomatic, centerfire stuff.
