How effective would motorcycle cavalry be in today's wars? Take some dirt bikes, put ceramic rifle plate fairings on them to protect the rider, and give the soldiers guns that they can easily wield one handed and maybe some swords for if they get really close.

Ceramics shatter. A machine gun would punch through them anyways. You might as well just use a regular horse like China and India and US SF are doing, since horses can negotiate terrain that bikes can't.

You won't be traveling near fast enough for the speed to even be a factor.
Machineguns have no problems engaging cars and other vehicles traveling at max speed, a dirtbike is no different while providing none of the advantages of a light truck or other offroad vehicle such as carry capacity and weapons carried.
GPMGs usually have a rate of fire between 600-800 rpm and are considered area denial weapons meant to saturate an area with enough firepower to make moving through that area a suicide mission.
If you move up to vehicle mounted weapons you start running into things like HMGs, miniguns and automatic grenade launchers that will do the same but at a even higher level.

Also who needs machineguns when you can just string some wire between the trees at neck hight and sit back and watch the carnage.
