Tikkas are around the $700-$800 range and underrated rifles, the guns are made by Sako to be commonly affordable.

Sakos are for when you realize life is short and no longer mind dropping $2,800 on a bolt action rifle.

I think I've decided. I hear the bolt is super smooth on these. Sadly I can't hold it in my hand before purchasing but it seems pretty promising. One question though, do you think you could find the stainless version for me?

.30-06 is higher in price to .308/7.62, and there's a much lower variety of ammo out there.

I've been doing some looking and the stainless/wood left hand models don't seem to have been imported to the United States yet...

For hunting loads the price is pretty close, but if you want target shooting ammo then it's 50 cents/rd for .308 versus 67 cents/rd for .30-06

No, you don't order one from the factory in Finland, exports don't work like that unless you're willing to pay hundreds of dollars for additional paperwork and remember the factory might tell you to fuck off since they're busy with already scheduled production runs. The links posted above were of guns already inside the United States imported by Beretta USA. You might be able to call Beretta and ask them if they would import a left handed .30-06 T3x Hunter Stainless by special order.

.308 will be much more common and have a wider variety of loads including inexpensive practice ammunition, midrange target ammunition, and high end competition and hunting loads.

Unless you're reloading your own ammo to take advantage of the additional case capacity of .30-06, there's no performance loss with the .308 except with certain heavy bullet hunting loads.

The less expensive ammo for .308 means more practice and getting better with your rifle.

The T3 documentation on Tikka's website is hard to read, but I think so.

All the web results I can find are gun shops in Australia and NZ, you'll have to call Beretta and ask if they imported any.
