So I have a few of these (pic related) 20" DPMS stainless steel bull barrels laying around. Anything about a bull barrel build that I should know?

Theyre heavy. Made for precision or high volume shooting.

Well I know that much, I meant any preferences from those that own one on how they set it up. I might build one and just use the rest as clubs for when I run out of ammo
Just make sure to get the right diameter gas block. The only thing special about a bull barrel it is that it's stiffer than other profiles, and makes your rifle front heavy. Sight systems built for 20" barrels will work the same.

What load of 223 should I be running through a barrel like this?

Depends on the twist rate

1-9

Lighter bullets should work better for you, as the heavier bullets require a greater twist rate (less inches to the rotation). M855 is the reason 1:7 twist barrels exist.
