What are the effective differences between these calibers? I've heard that 7mm ballistics are superior, but Imperial Germany had to have had some reason to switch, right?

Terminal effectiveness at distance. The 8mm was adopted in 1888, two years after smokeless powder came around. They thought the extended range of smokeless powder would be utilized more than it actually was.
I've always wondered this as well I handload for the 8x57 to get the maximum power but the 7mm seems to have a flatter trajectory making me wonder which one is superior

With a round nose, lead bullet the 8mm will be more 'effective' by virtue of its greater projectile weight. Again, this is coming off black powder.
8mm Mauser is mostly used for milsurp at this point. There are still new guns made in 7mm Mauser.

External ballistics doesn't really work that way, what you're talking about is a diameter with literally every other variable from charge weight and type to bullet design and seating depth being up in the air. But a very basic explanation is that 8mm Mauser allows the use of heavier bullets, which can be advantageous. However 7mm Mauser will typically have some better ballistic properties, like ballistic coefficient and sectional density, when the bullet weight and design are the same in the two rounds.
Neither is 'better' but it could be argued that for long range shooting the heaviest 7mm bullet might have better BC than bullets in the typical weight range for 8mm (180-200gr) or even the heaviest 8mm bullets, depending on design, as well as lighter recoil. But you could say for large game the 8mm might be better with bullets of 200gr or more available to load, but then again you'd have to look at deign and SD etc.

well, thre are just as much rifles in 8x57 than in 7mm. Most hunting rifles in germany are chambered for it.
