From what I have read the Germans captured enough Soviet gear that they manufactured ammo for it, guns and tanks, but I'm sure more uncommon stuff was either fitted with a new gun or used with captured ammo

An engineer before the war, Alfred Becker spent his war years in France, combing the beaches of Dunkirk and the various abandoned French equipment graveyards for vehicles, which he would fix up, slap on German optics and a gun and have them sent to Africa for Rommel. Rommel was impressed by it, so he presented his new friend to Hitler along with examples of his work. Hitler was just as impressed, and gave Becker all the men and resources Becker would ever need and commissioned him to field two divisions worth of converted armour.
He accomplished his order.
