Obviously there's the issue of speed and capacity.
Why have a single cartridge in a pistol with a mechanism that's slow to work when there's more practical options out there?

Remington sold quite a few XP-100's.
They were a niche market, but still thousands were sold.
If they offered one in 5.56 NATO , with a left handed action and set up to feed from a STANAG mag from the left, I'd have one for sod-poodles.

Also pistols aren't made for very long range so you don't get all that many benefits from having it be bolt action. As far as I can tell, the primary reason bolt action rifles are still common is that they can be made more precise due to the lack of moving parts after a round goes off. Just my thoughts, could be way off the mark.
