How much weight do soldiers carry during live fire exercises? I know for instance that SAPI plates aren't usually worn because they can break. Therefore, is the training accurate to real combat situations, or is the weight difference inconsequential?

They are wearing armor in the majority of that footage. But oh wow you found some footage with no armor on- sometimes troops train that way, most large scale exercises troops wear it.
OP reasoning of "they don't wear it because it might break" is completely fucking wrong. Usually not wearing armor is because the troops are being phased in to being accustomed to the environment, or if they are being trained with other gear that puts extra strain on them. The beginning they are wearing JSLIST suits, likely the first run of them being tactical in JSLIST before armoring up. They do the same shit in Lousiana, where troops will often do initial exercises without armor to give them time to get used to the ungodly heat and humidity.

I've done exact math before. Not gonna bother but a USMC SAW Gunner (me) carried:
Flak plus Sapis: 25 lbs
M249: 17 lbs
3 drums aka 600 rounds: 24 lbs
Water: 2 canteens = 4 lbs
That's 70. Throw on attachments like IFAK, grenades, a loaded daypack etc. 80 pounds, loaded heavy close to 100.

Webbing inc. magazines, mess kit, canteen, first aid kit etc
Plate carrier with front, rear and side plates
Rifle
Helmet
Shit in your smock pockets like multitools/maps/lighter/other shite
Comms equipment
Probably totals out at at least 20-25kg, more if you have a daysack with MREs, more ammo or are a signaller or support gunner.
CEMO you can easily top 60-70kg if youre going out for a fair few days.
