If you're interested in jets on a technical level, watch some documentaries on early jet fighters and experimental planes from the 40s through the 70s. Even the ones that were failures are valuable lessons on how aircraft work. For technical stuff about planes in general, I suggest watching documentaries like Air Crash Investigation. For me, learning how things fail helps me understand how they work, why they work, and what their limits are. Also look into documentaries or info about different engines. If you're up for a bit of reading, look for books by pilots such as the book "Viper Pilot" which is about a F-16 pilot who did SEAD in Iraq 1 and 2.
