How were they used ? How common were they ? Was it a standard weapon among Grenadiers, or a very specialized weapon only given to the best of the best ? Was it effective ?

I don't really know how common they'd be, but I suspect it'd vary from country to country, and over time.

A number of museums, and that specific video, all mention tossing grenades as one use for them. Ian's comment about the grenade launchers not being in the form he has would seem to refer to the stocks. Heavy grenades makes for heavy recoil, which won't be all too fun with the small, pistol-style stocks seen on the mortars in the video. The one in OP's pic has a full stock on the other hand.

Watching a bit more Ian too gets into the stock. Well, better that than the opposite I guess.

Although the one Ian presents was made for non-combat use, there are definitely functional grenade launchers out there (at least that's how they are described by museums).

The wheel lock part was probably plan A. But as for risks, well, compare with loading a normal matchlock as you juggle the gun, the lit match, and your powder flask. Let's just keep the grenades in their pouch for now...

And yeah, that one looks like a fireworks spitter. On top of the decorations it doesn't quite have a proper musket stock either.

Mostly they'd launch them much like we do today. Multi stage rockets was an invention of 16th century fireworks maker Johann Schmidlap.

Fireworks today are still mainly mortar based. The only difference now is we use PVC pipe in wooden racks instead of buried steal and wooden pipes. Rockets are specialty items rarely used, and they're banned in many states because they're hard to control and pose a fire risk.
