Because rifles are effective, and it's easier to field a carbine that uses the same parts and ammunition as your rifle than it is to field an entirely distinct weapons system.

It's really the advent of the modern specialized PDW that killed the Uzi.
It's not that they were bad guns, it's just that the MP5K, Scorpion, Glock 18, P90, MP7, etc all did their job much, much better than the venerable old Uzi did.

I have 2 Uzi's, A pistol and an SMG.
Both are heavy, and both are super accurate. They are range toys, and more fun to shoot than my AR, but since they are so heavy, dont make a good SHTF choice.
So where does the Uzi fit in today's choices?
In a SHTF scenario, I'll take my AR over the Uzi, and I'll take my 1911 in a "noise in the middle of the night" scenario.
The Uzi is fun enough at the range, but that's really its only purpose
