The free floating handguard on my AR is a pain in the ass to remove so I don't see myself ever taking it off unless absolutely necessary.
I'm a little concerned about the barrel rusting underneath it. What is the best grease or oil that I can apply to the outside of the barrel so that it's protected from rust for as long as possible? One that doesn't pick up too much crud if possible.

is it stainless? as long as you arent a somali pirate out on the ocean, it probbaly wont rust. an ss barrel might develop a little discoloration, just take the rail off and clean it.

You all say this but I found my cz 452 had a light rust spot under the barrel and all it did was sit in the open in my room
If you want to be safe I would lightly coat exterior metal in some sort of gun oil as mentioned here:

Gun oil is mostly solvent and flashes to nothing after a short while.

I've seen some tests done that have found decent rust resistance of something as simple as hoppes 9 lube oil.
As far as what I suggested the lubriplate 350 aw has rust preventing additives.
