Turkeys are weary critters with a fairly small killzone(that won't ruin the meat.) this means that they require long range and tight patterns to reliably bag.

higher velocity and heavier loads mean tighter patterns at longer ranges so you can guarantee at least a couple pellets in the head for a kill shot.
it's not like they need all 2oz of shot in them to take them down.

The weight of the gun has little to do with it, the powder in the shotshells burns much faster than the powder in the rifle and that 835 grain load gets up to speed pretty quickly. This generates a much higher recoil impulse.
